Catering Development Manager

Our client a leading University are looking for a Catering Development Manager To oversee the management of all chefs and food handlers. To directly line manage two chef managers and a Purchasing Stores and Stock Manager.ensure the provision of food and beverages to the highest standard within the financial limitations set and comply with all Company policies and regulations in respect of health, safety and environmental management at work and to ensure the highest standards of kitchen practice and hygiene Duties of the Post: The main duties of the post will include: Responsible for the development of new concepts, menus and recipes in conjunction with Chefs, and take accountability for the production of menu toolkits/recipe cards. Implement healthy eating initiative on campus Responsible for Quality assurance on all food, through preparation and display Keep abreast of current and emerging trends within the food sector and implement where required. Procurement responsibility for equipment, consumables and food products in collaboration with Purchasing Stores and Stock Manager. Production of food hygiene compliance manuals and training support to enable the Chefs/Duty managers to monitor the quality of the product, as well as control the food hygiene operations. Analyse the training needs of Chefs and all food handlers, and the preparation and delivery of training programmes where applicable. Conduct annual staff appraisals and undertake training requirements analysis for all areas of the department. Providing advice to the Retail Operations Manager on provision and costs of required training Provide regular quality control and food hygiene audits in all units. Monitoring of the individual retail units' budgets with recommendations for remedial action in the event of adverse results, as well as strategies for the maximising of revenue and GP%s Lead in the selection and recruitment of all catering staff. Advise on kitchen design and catering staffing levels within the units. Responsible for efficient and effective teamwork, within catering teams To assist in the annual business and operational business plan Attend regular Senior Management meetings.
